Fig Jam Salad

One of my favorite salads is packed with swirling flavors. The salty prosciutto, sweet fig jam, and peppery arugula work well together. Add some crunchy walnuts for an extra bite in the texture, this salad is bliss with every bite. I make this salad to compliment a steak entree or as a meal by itself.

Serves 2-3 people | 10 minutes

5 oz of fresh arugula, washed

3 oz of prosciutto, pre-sliced

1/3 cup of walnuts

1 tablespoon of fig jam

2 tablespoon of olive oil

1 teaspoon of balsamic vinegar

1 teaspoon of freshly squeezed lemon juice

Shredded Parmesan cheese to taste

Black pepper to taste

Placed the pre-washed arugula into a large salad bowl and set aside. Chop prosciutto on a cutting board. Next, add 1 tablespoon of olive oil to a frying pan and turn to medium heat. Add prosciutto to the frying pan and remove from heat once crispy. Pour a tablespoon of olive oil, fig jam, and balsamic vinegar into a small bowl. Heat the fig jam mixture in the microwave for 30 seconds and stir until smooth. Add the fig jam mixture, walnuts, crispy prosciutto, and lemon juice to salad bowl. Add lemon juice. Add pepper and Parmesan cheese to taste. Toss the salad with tongs until the ingredients are evenly mixed. Serve immediately, and enjoy!
