Quarantine Recipe: 10-minute single serving cake



This single-serving vanilla cake is perfect if you're craving something decadent, but aren't fully committed to baking an entire cake. You'll absolutely fall in love with this recipe because it only takes 10 minutes to prepare, the cake is flavorful, and the frosting is to die for (do NOT skip out on the frosting). Sure, you technically can split this dessert between two people, but why would you? I recommend you top it off with berries; the fresh, tart qualities complement the richness of the cake. Without further adieu, here is how to make my favorite single-serving cake!


Ingredients for the Cake:

  • 2 tablespoons of unsalted butter

  • 1 tablespoon of whole milk

  • 1 teaspoon of vanilla extract

  • 1 large egg yolk

  • 2 tablespoons of granulated sugar

  • 4 tablespoons of all-purpose flour (I use gluten-free flour)

  • 1/2 teaspoon of baking powder


Ingredients for the Frosting:

  • 5 tablespoons of room-temperature unsalted butter

  • 2 large spoonful of shortening

  • 7 large spoonfuls of powdered sugar

  • 1 1/2 teaspoons of vanilla extract

  • 1 teaspoon of cinnamon


Directions for the Cake:

In a small bowl, add sugar, flour, baking powder, and cinnamon. Whisk together. Set aside.


In a large, deep mug or soufflé dish, add the butter and microwave for 20 seconds. Remove from the microwave and add milk, vanilla extract, and egg yolk. Mix together.


Add dry ingredient mix to the mug and mix thoroughly until smooth. Place mug in microwave and heat for a total of 60 seconds to cook the cake mix. Remove the mug from the microwave.


Gently run a knife along the inside of the mug, all the way around, to separate the cake from the mug. Transfer the cake to a small plate by gently flipping the mug onto a plate. Set aside and let cool.


Directions for the Frosting:

In a medium-size bowl, add butter, shortening, vanilla extract, sugar, and cinnamon. Using a hand mixer or an electric mixer with a whisk attachment, mix together the ingredients on high speed until ingredients are combined and reach a whipped-like texture.


Spread a thin layer of lemon curd on top of the cake (optional). Spoon frosting on top and spread evenly. Add berries, pour yourself a glass of champagne (why not?), serve immediately, and enjoy!
